‘Ambe Upkari’ is a very popular Konkani curry made with fresh juicy seasonal mangoes. It is one of the staple food in Kokani households during summer and is served as a side dish with phulkas, rice, dal chawal, khichidi etc.
Small yellow mangoes simmered with aromatic spices taste very distinct. Hence, though sweet mangoes are used for this curry, but it also has a punch of sourness and the feel of spices including ‘Red Chillies’. Sounds interesting, right? Let’s check out the recipe!
Did you know, In Rajasthan a similar kind of curry is made with 'Green Mangoes' or 'Kacche Aam'. called....'Kairi Ki Sabzi'. However the recipe and taste is very different from this one. Actually, this is the beauty of 'Mangoes', that in whatever stage they are, you can still use them in your cooking and make each dish tasting absolutely differently and brilliant, like 'Aam ka Achaar' and 'Mango Panna'.
Serve this lip smacking ambe upkari with roti and cumin rice. Team up with Palak tamatar ki subzi, Khatte meethe aloo and Boondi ka raita for a satisfying meal. Do not miss to serve Rajasthani green chilly pickle. The spice quotient goes very well with the sweet and mild spicy flavors of this mango curry.
