In South Indian cuisine ‘Poriyal’ means stir fried vegetables with spices, coconut and usually served as a side dish in regular meals along with rice, sambhar or rasam. This recipe of green beans poriyal (Also known as ‘Bean Sundal’) requires less than 30 minutes of cooking. We have given it a healthy twist by adding moong dal (Yellow lentil) and used just 1 tablespoon of oil for the entire process. The beans are mildly spiced with mustard seeds, red chilly and the addition of freshly grated coconut enhances the flavors. Besides, this is a no onion garlic recipe so you can also make it on days when you prefer to have a light meal without much fuss.
Bean poriyal with moong dal tastes best with ghee rice or cumin rice along with sambhar or rasam. Serve Andhra paruppu podi on side and a bowl of plain or masala curd.
For a healthy and filling meal serve beans poriyal with dal tadka, bottle gourd thoran and kadhi pakodi. For a change you can substitute rotis n plain paranthas with spinach thepla or tomato dosa.
