Mushy over ripe bananas are put into a good use in this exceptionally delicious cake. It is dense, not too sweet and pairs very well with your morning cup of tea or coffee. We haven’t used butter or oil for a low fat recipe and rather used healthier options like honey and brown sugar to naturally sweeten the cake while keeping it moist at the same time. Moreover rich flavors of vanilla, cinnamon and black raisins beautifully compliment this cake and make it pleasantly sweet. Just remember….the riper the bananas, the better for this recipe !
Did you know, the nutritional contents of banana changes as the fruit becomes more ripe. This change is not necessarily bad. An over ripe banana is easy to digest and a rich source of antioxidants which is very beneficial for the body. It prevents cell damage and lowers the risk of certain diseases. However, because of the high sugar contents people suffering with diabetes must avoid consuming it.
